Here's how they make the flat bread. The guy in back shapes it by hand. Then it is thrust into the oven and stuck to the oven wall. The fire inside is fiercely hot. The guy with the gloves and tongs pulls it out when it's done and hands it to the guy on the right who stacks and sells it. They do a brisk business and the stuff is lovely to eat. I learned how to do it pretty well.
